Garlic Butter Shrimp Pasta

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 12 ounces linguine or spaghetti
  • 6 tablespoons butter, divided
  • 6 cloves garlic, minced
  • 1/4 cup white wine (or chicken broth)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup freshly grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to boil. Cook pasta according to package directions until al dente.
  2. While the pasta cooks, pat the shrimp dry with paper towels and season with salt and pepper.
  3. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add shrimp and cook for 2-3 minutes per side until pink. Remove to a plate.
  4. In the same skillet, add remaining butter and garlic. Cook until fragrant, about 1 minute.
  5. Add white wine and lemon juice, simmer for 2-3 minutes until slightly reduced.
  6. Drain pasta, reserving 1/2 cup of pasta water.
  7. Add pasta to the skillet with the garlic butter sauce. Toss well, adding pasta water as needed to create a silky sauce.
  8. Return shrimp to the skillet, add parsley and red pepper flakes. Toss to combine.
  9. Serve immediately with freshly grated Parmesan cheese.
