Looking for a quick, delicious weeknight dinner that’s packed with flavor? This Pork and Green Bean Stir-Fry is my go-to recipe when I want something satisfying yet simple. It combines tender strips of pork with crisp green beans in a savory sauce that’ll make you forget about takeout. The best part? It comes together in less than 30 minutes!
Ingredients
- 1 pound pork tenderloin, sliced into thin strips
- 1 pound fresh green beans, trimmed
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- ¼ cup water
- Salt and pepper to taste
Instructions
- Start by mixing soy sauce, oyster sauce, and cornstarch in a small bowl until well combined. Set aside.
- Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add pork strips and cook until browned, about 3-4 minutes. Remove and set aside.
- In the same pan, add remaining oil. Toss in garlic and ginger, stirring quickly to prevent burning.
- Add green beans and stir-fry for 3-4 minutes until they turn bright green and become slightly tender but still crisp.
- Pour in water and cover the pan for 2 minutes to steam the beans.
- Return pork to the pan and add the sauce mixture. Stir everything together until the sauce thickens and coats all ingredients evenly.
- Season with salt and pepper to taste.
Cook Time and Serving Size

Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4
Recipe Notes
- For the most tender results, slice the pork against the grain and make sure the strips are uniform in size.
- Don’t overcrowd the pan when cooking the pork – work in batches if necessary.
- Feel free to substitute snow peas or sugar snap peas for green beans.
- The sauce can be made ahead and stored in the refrigerator for up to 2 days.
- Make sure your pan is really hot before adding ingredients – this ensures proper searing and prevents sticking.
- If you prefer spicy food, add a teaspoon of chili garlic sauce or red pepper flakes to the sauce mixture.
This stir-fry pairs perfectly with steamed rice or noodles, making it a complete meal that’s both nutritious and satisfying. The leftovers (if you have any!) reheat beautifully for lunch the next day.
