Pork and Green Bean Stir-Fry

Looking for a quick, delicious weeknight dinner that’s packed with flavor? This Pork and Green Bean Stir-Fry is my go-to recipe when I want something satisfying yet simple. It combines tender strips of pork with crisp green beans in a savory sauce that’ll make you forget about takeout. The best part? It comes together in less than 30 minutes!

Ingredients

  • 1 pound pork tenderloin, sliced into thin strips
  • 1 pound fresh green beans, trimmed
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch
  • 2 tablespoons vegetable oil
  • ¼ cup water
  • Salt and pepper to taste

Instructions

  1. Start by mixing soy sauce, oyster sauce, and cornstarch in a small bowl until well combined. Set aside.
  2. Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add pork strips and cook until browned, about 3-4 minutes. Remove and set aside.
  3. In the same pan, add remaining oil. Toss in garlic and ginger, stirring quickly to prevent burning.
  4. Add green beans and stir-fry for 3-4 minutes until they turn bright green and become slightly tender but still crisp.
  5. Pour in water and cover the pan for 2 minutes to steam the beans.
  6. Return pork to the pan and add the sauce mixture. Stir everything together until the sauce thickens and coats all ingredients evenly.
  7. Season with salt and pepper to taste.

Recipe Notes

  • For the most tender results, slice the pork against the grain and make sure the strips are uniform in size.
  • Don’t overcrowd the pan when cooking the pork – work in batches if necessary.
  • Feel free to substitute snow peas or sugar snap peas for green beans.
  • The sauce can be made ahead and stored in the refrigerator for up to 2 days.
  • Make sure your pan is really hot before adding ingredients – this ensures proper searing and prevents sticking.
  • If you prefer spicy food, add a teaspoon of chili garlic sauce or red pepper flakes to the sauce mixture.

This stir-fry pairs perfectly with steamed rice or noodles, making it a complete meal that’s both nutritious and satisfying. The leftovers (if you have any!) reheat beautifully for lunch the next day.
