- 1 package 9 oz refrigerated cheese tortellini
- 4 cups vegetable or chicken broth
- 1 can 14.5 oz diced tomatoes
- 2 cups fresh spinach
- 1 small onion diced
- 3 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving optional
Heat olive oil in a large pot over medium heat. Add diced onion and cook for 2-3 minutes until softened.
Add minced garlic and cook for another 30 seconds until fragrant.
Pour in the broth and diced tomatoes (with their juice). Bring to a gentle boil.
Add Italian seasoning, salt, and pepper.
