Ingredients
  

  • 2 slices of sourdough bread
  • 1 ripe avocado
  • 1 medium ripe tomato
  • 1/2 lemon
  • 1/4 teaspoon red pepper flakes
  • Salt and freshly ground black pepper to taste
  • Extra virgin olive oil for drizzling

Instructions
 

  • Toast your bread slices until they're golden brown and crispy.
  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  • Add a squeeze of lemon juice to the avocado and mash it with a fork.
  • Season the mashed avocado with salt and pepper to taste.
  • Slice the tomato into thin rounds or dice it.
  • Spread the seasoned avocado mixture on each piece of toast.
  • Top with tomato slices or chunks.
  • Finish with a drizzle of olive oil, a sprinkle of red pepper flakes, and additional salt and pepper to taste.
