- 2 large firm avocados
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut each avocado in half, remove the pit, and slice into 1/2-inch thick wedges. You should get about 8 wedges per avocado.
Set up your breading station: Place flour in one shallow dish, beaten eggs in another, and combine panko breadcrumbs with garlic powder, paprika, salt, and pepper in a third dish.
Working with one wedge at a time, coat the avocado in flour, dip in egg, then roll in the seasoned breadcrumbs until well-coated.
Arrange the breaded wedges on your prepared baking sheet, leaving space between each piece.
Spray the wedges lightly with cooking spray – this helps achieve that golden-brown color.
Bake for 15-20 minutes, flipping halfway through, until the coating is crispy and golden brown.
