Ingredients

  • pounds sirloin steak cut into 1-inch cubes
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and freshly ground black pepper to taste
  • Optional: 1 tablespoon fresh rosemary chopped

Instructions

  • Pat the steak cubes dry with paper towels and season generously with salt and pepper.
  • In a medium bowl, whisk together balsamic vinegar, soy sauce, honey, and minced garlic.
  • Heat olive oil in a large cast-iron skillet or heavy-bottom pan over high heat until it's almost smoking.
  • Add steak bites in a single layer, working in batches if necessary to avoid overcrowding. Sear for 2-3 minutes per side for medium-rare.
  • Remove the steak bites and set aside. Lower heat to medium.
  • Pour the balsamic mixture into the pan, scraping up any browned bits. Let it simmer for 2-3 minutes until it starts to thicken.
  • Add butter and return the steak bites to the pan, tossing to coat in the glaze. Cook for another minute until everything is well combined and heated through.
