BBQ Pulled Beef Sliders

These mini sandwiches pack all the rich, smoky flavor of traditional pulled beef into a convenient, party-friendly size. I've fine-tuned this recipe to create tender, juicy beef that's smothered in a perfectly balanced BBQ sauce, all nestled in soft, pillowy slider buns.

Ingredients
  

  • 3 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 cup beef broth
  • 1 cup quality BBQ sauce plus extra for serving
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons chili powder
  • 12-15 slider buns
  • Salt and pepper to taste
  • Coleslaw for serving optional

Instructions
 

  • Season the chuck roast generously with salt and pepper on all sides. Heat olive oil in a large Dutch oven over medium-high heat.
  • Sear the meat for 4-5 minutes on each side until you get a nice brown crust. Remove and set aside.
  • In the same pot, reduce heat to medium and sauté the diced onions until translucent (about 5 minutes). Add garlic and cook for another minute.
  • Return the meat to the pot. Add beef broth, BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, and chili powder. Stir to combine.
  • Bring to a simmer, then reduce heat to low. Cover and cook for 3-4 hours, or until the meat easily shreds with a fork.
  • Remove the meat and shred it using two forks. Return it to the pot and stir to combine with the sauce.
  • Toast the slider buns if desired, then pile the pulled beef onto the bottom buns. Add extra BBQ sauce and coleslaw if using, then top with the bun tops.
