BBQ Pulled Beef Sliders
These mini sandwiches pack all the rich, smoky flavor of traditional pulled beef into a convenient, party-friendly size. I've fine-tuned this recipe to create tender, juicy beef that's smothered in a perfectly balanced BBQ sauce, all nestled in soft, pillowy slider buns.

- 3 lbs beef chuck roast
- 2 tablespoons olive oil
- 1 large onion diced
- 4 cloves garlic minced
- 1 cup beef broth
- 1 cup quality BBQ sauce plus extra for serving
- 2 tablespoons apple cider vinegar
- 1 tablespoon brown sugar
- 1 tablespoon smoked paprika
- 2 teaspoons chili powder
- 12-15 slider buns
- Salt and pepper to taste
- Coleslaw for serving optional
Season the chuck roast generously with salt and pepper on all sides. Heat olive oil in a large Dutch oven over medium-high heat.
Sear the meat for 4-5 minutes on each side until you get a nice brown crust. Remove and set aside.
In the same pot, reduce heat to medium and sauté the diced onions until translucent (about 5 minutes). Add garlic and cook for another minute.
Return the meat to the pot. Add beef broth, BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, and chili powder. Stir to combine.
Bring to a simmer, then reduce heat to low. Cover and cook for 3-4 hours, or until the meat easily shreds with a fork.
Remove the meat and shred it using two forks. Return it to the pot and stir to combine with the sauce.
Toast the slider buns if desired, then pile the pulled beef onto the bottom buns. Add extra BBQ sauce and coleslaw if using, then top with the bun tops.
