Berry Chia Seed Pudding
This Berry Chia Seed Pudding is a nutritious and delicious breakfast option, incredibly simple to make, packed with protein and omega-3s.

- 1/4 cup chia seeds
- 1 cup plant-based milk I use almond, but coconut milk works beautifully too
- 1 tablespoon maple syrup or honey if not vegan
- 1/2 teaspoon vanilla extract
- 1 cup mixed berries strawberries, blueberries, raspberries
- Optional toppings: granola coconut flakes, additional fresh berries
In a medium bowl, combine the chia seeds, milk, maple syrup, and vanilla extract. Give it a good stir – make sure there aren't any clumps of chia seeds sticking together.
Let it sit for about 5 minutes, then stir again. This extra step prevents the chia seeds from clumping at the bottom.
Cover the bowl and refrigerate for at least 4 hours or overnight. I usually make it before bed for the best results.
When ready to serve, give it another quick stir. The mixture should be thick and pudding-like.
Layer the pudding with fresh berries in your favorite jar or bowl, then add your chosen toppings.
