  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 package 13.2 ounces graham crackers, or similar crackers like digestive biscuits
  • Optional: powdered sugar for dusting

Instructions
 

  • In a medium bowl, put in the softened cream cheese and granulated sugar. Use a hand mixer or a whisk to beat the cream cheese and sugar together until they are smooth and creamy.
  • Pour in the vanilla extract to the cream cheese mixture. Stir it in gently until it's just combined. Next, add your fresh blueberries to the bowl. Gently fold the blueberries into the cream cheese mixture using a spatula. Be careful not to overmix.
  • Take your graham crackers or chosen crackers. Spread a spoonful of the blueberry cream cheese mixture onto each cracker. Make sure to spread it evenly.
  • At this point, you can enjoy your Blueberry Cream Cheese Bites right away! However, if you prefer a firmer bite, you can place them in the refrigerator to chill for about 30 minutes.
  • If you want to make them look a little extra fancy, you can lightly dust the tops of your Blueberry Cream Cheese Bites with powdered sugar just before serving.
