- 1 pound flank steak thinly sliced against the grain
- 1 large head broccoli cut into bite-sized florets (about 3 cups)
- 8 ounces dried lo mein noodles
- 1/2 cup low-sodium soy sauce
- 1/4 cup low-sodium beef broth
- 2 tablespoons light brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon freshly grated ginger
- 2 cloves garlic minced
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- Sesame seeds and chopped green onions for garnish optional
Cook lo mein noodles according to package directions. Drain and rinse under cold water. Set aside.
In a small bowl, whisk together soy sauce, beef broth, brown sugar, cornstarch, ginger, garlic, and sesame oil until smooth.
Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Add beef and cook for 2-3 minutes until browned but slightly pink. Remove and set aside.
Add remaining tablespoon vegetable oil to the skillet. Add broccoli and stir-fry for 3-4 minutes until bright green and tender-crisp.
Return beef to skillet with broccoli. Pour sauce over beef and broccoli. Bring to a simmer, stirring constantly, until thickened and glossy (1-2 minutes).
Add cooked lo mein noodles to skillet. Toss until noodles are coated with sauce and heated through.
Serve immediately, garnished with sesame seeds and green onions if desired.
