- 1/4 cup chia seeds
- 1 cup coconut milk full-fat or light
- 1 tablespoon maple syrup or honey, agave, or your favorite sweetener
- 1/2 teaspoon vanilla extract
- 1/4 cup mixed berries fresh or frozen, such as blueberries, raspberries, and strawberries
- Optional toppings: shredded coconut nuts, more berries, a drizzle of honey, or a sprinkle of cinnamon
Combine Ingredients: In a medium-sized bowl or jar, combine the chia seeds, coconut milk, maple syrup (or your sweetener of choice), and vanilla extract.
Mix Well: Stir the mixture thoroughly to ensure the chia seeds are well combined. This helps prevent clumping.
Let It Sit: Cover the bowl or jar and place it in the refrigerator. Let it sit for at least 2 hours, or preferably overnight. This allows the chia seeds to absorb the coconut milk and create a pudding-like consistency.
Stir Again: After the pudding has chilled, give it another good stir. If it’s too thick, add a splash more coconut milk to reach your desired consistency.
Add Berries: Gently fold in the mixed berries.
