Chicken Pho with Rice Noodles

A comforting, fragrant, and surprisingly easy Chicken Pho recipe with rich, flavorful broth, tender chicken, and silky noodles.

Ingredients
  

  • 1 whole chicken 3-4 lbs, or 4 bone-in chicken thighs
  • 8 cups chicken broth low sodium
  • 1 large onion halved
  • 4- inch piece of ginger sliced
  • 3 star anise pods
  • 1 cinnamon stick
  • 4 cloves
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 8 oz dried rice noodles
  • bean sprouts
  • Thai basil
  • lime wedges
  • sliced jalapeƱos
  • hoisin sauce

Instructions
 

  • Add chicken, broth, onion, ginger, star anise, cinnamon, and cloves to a pot. Bring to a boil, then reduce to a simmer. Skim off foam. Cook for 45 minutes (thighs) or 1 hour (whole chicken).
  • Remove chicken, cool, shred, and discard skin/bones. Strain broth, discarding spices and onion.
  • Boil soaked noodles for 1-2 minutes until tender. Rinse under cold water.
  • Divide noodles into bowls, top with shredded chicken, and ladle hot broth.
