- 2 cups long-grain white rice
- 4 cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 limes juice and zest
- 1 cup fresh cilantro finely chopped
- 2 cloves garlic minced (optional)
Rinse the rice thoroughly under cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice, water, olive oil, and salt.
Bring to a boil over high heat, then reduce to low and cover with a tight-fitting lid.
Simmer for 18-20 minutes, or until water is absorbed and rice is tender.
Remove from heat and let stand, covered, for 10 minutes.
Fluff the rice with a fork and stir in lime zest, lime juice, and chopped cilantro.
If using garlic, add it while the rice is still hot to gently cook it with the residual heat.
