- 1 cup of fresh cilantro leaves
- 1/4 cup of pine nuts or walnuts or cashews
- 2 cloves of garlic
- 1/4 cup of Parmesan cheese
- 1/4 cup of olive oil
- Salt and pepper to taste
- 2 naan flatbreads
- 1 cup of cooked shredded chicken
- 1 cup of shredded mozzarella cheese
First, make the pesto. In a food processor, combine cilantro, pine nuts, garlic, and Parmesan cheese. Chop until finely ground.
With the machine running, slowly pour in olive oil until smooth. Season with salt and pepper. Add a little water if too pasty.
Preheat oven to 400°F (200°C).
Place naan flatbreads on a baking sheet.
Spread cilantro pesto evenly over each flatbread.
Top with shredded chicken, distributing evenly.
Sprinkle mozzarella cheese over the chicken.
Bake for 10-12 minutes, or until cheese is melted and bubbly and flatbread is heated through.
