Ingredients
  

  • 1 cup of fresh cilantro leaves
  • 1/4 cup of pine nuts or walnuts or cashews
  • 2 cloves of garlic
  • 1/4 cup of Parmesan cheese
  • 1/4 cup of olive oil
  • Salt and pepper to taste
  • 2 naan flatbreads
  • 1 cup of cooked shredded chicken
  • 1 cup of shredded mozzarella cheese

Instructions
 

  • First, make the pesto. In a food processor, combine cilantro, pine nuts, garlic, and Parmesan cheese. Chop until finely ground.
  • With the machine running, slowly pour in olive oil until smooth. Season with salt and pepper. Add a little water if too pasty.
  • Preheat oven to 400°F (200°C).
  • Place naan flatbreads on a baking sheet.
  • Spread cilantro pesto evenly over each flatbread.
  • Top with shredded chicken, distributing evenly.
  • Sprinkle mozzarella cheese over the chicken.
  • Bake for 10-12 minutes, or until cheese is melted and bubbly and flatbread is heated through.
  • Let cool slightly before slicing and serving.
