- 4 cod fillets 6 oz each
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup all-purpose flour
- 3 tbsp unsalted butter
- 2 garlic cloves minced
- 1/2 cup chicken or vegetable broth
- Juice of 1 lemon about 3 tbsp
- 1 tsp lemon zest
- 2 tbsp fresh parsley chopped (optional)
Season both sides of the cod fillets with salt and pepper. Lightly coat them in flour, shaking off excess.
Heat 1 tbsp butter in your skillet over medium-high. Once it sizzles, add the cod. Cook for 4-5 minutes per side until golden. Remove fish and set aside.
Reduce heat to medium. Add garlic and cook for 30 seconds until fragrant. Pour in broth and lemon juice, scraping up browned bits from the pan. Let it simmer 2-3 minutes to reduce slightly.
Swirl in remaining butter, one tablespoon at a time, until the sauce becomes glossy. Stir in lemon zest, then return cod to the pan. Spoon sauce over fish and cook 1-2 minutes to warm through.
