Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning plus more to taste
  • 12 ounces fettuccine or penne pasta
  • 2 tablespoons olive oil
  • 1 red bell pepper sliced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • Season the chicken pieces generously with Cajun seasoning, making sure they're evenly coated.
  • Bring a large pot of salted water to boil and cook pasta according to package directions until al dente.
  • While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
  • Add the seasoned chicken to the skillet and cook for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add bell peppers and onions. Sauté for 3-4 minutes until slightly softened.
  • Add minced garlic and cook for another 30 seconds until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer. Reduce heat to medium-low.
  • Stir in the Parmesan cheese and butter until melted and smooth.
  • Return the chicken to the skillet and add the drained pasta. Toss everything together until well combined.
  • Taste and adjust seasonings with additional Cajun seasoning, salt, and pepper as needed.
