- Chicken Breasts: 1.5 to 2 pounds boneless, skinless
- Cream of Chicken Soup: Two 10.75-ounce cans
- Chicken Broth: 1/2 cup
- Sour Cream: 1 cup
- Stuffing Mix: One 6-ounce box
- Butter: 1/2 cup one stick, melted
- Onion finely diced (Optional)
- Celery finely diced (Optional)
Place the chicken breasts in a single layer at the bottom of the crockpot.
In a separate mixing bowl, whisk together the cream of chicken soup, chicken broth, and sour cream until smooth.
Pour the soup mixture evenly over the chicken breasts in the slow cooker.
In another medium mixing bowl, add the stuffing mix, diced onion, diced celery, and melted butter. Mix well.
Sprinkle the stuffing mix evenly over the top of the chicken and sauce.
Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours. The chicken is done when it's cooked through and reaches an internal temperature of 165°F (74°C). The stuffing should be moist and slightly browned on top.
Let the dish sit for about 5-10 minutes before serving. Then, give everything a gentle stir to combine the chicken, sauce, and stuffing, or serve them layered.
