Ingredients
  

  • Chicken Breasts: 1.5 to 2 pounds boneless, skinless
  • Cream of Chicken Soup: Two 10.75-ounce cans
  • Chicken Broth: 1/2 cup
  • Sour Cream: 1 cup
  • Stuffing Mix: One 6-ounce box
  • Butter: 1/2 cup one stick, melted
  • Onion finely diced (Optional)
  • Celery finely diced (Optional)

Instructions
 

  • Place the chicken breasts in a single layer at the bottom of the crockpot.
  • In a separate mixing bowl, whisk together the cream of chicken soup, chicken broth, and sour cream until smooth.
  • Pour the soup mixture evenly over the chicken breasts in the slow cooker.
  • In another medium mixing bowl, add the stuffing mix, diced onion, diced celery, and melted butter. Mix well.
  • Sprinkle the stuffing mix evenly over the top of the chicken and sauce.
  • Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours. The chicken is done when it's cooked through and reaches an internal temperature of 165°F (74°C). The stuffing should be moist and slightly browned on top.
  • Let the dish sit for about 5-10 minutes before serving. Then, give everything a gentle stir to combine the chicken, sauce, and stuffing, or serve them layered.
