- 3 large sweet potatoes peeled and cut into 1-inch chunks
- 2 tablespoons olive oil
- 1 red onion diced
- 1 red bell pepper chopped
- 1/2 cup fresh cilantro chopped
- 1/3 cup pepitas pumpkin seeds
- 3 tablespoons lime juice
- 2 tablespoons honey
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Preheat your grill to medium-high heat (around 400°F).
Toss sweet potato chunks with olive oil, salt, and pepper in a large bowl.
