Kale and Apple Salad with Walnuts

Ingredients
  

  • 1 large bunch fresh kale stems removed and chopped
  • 2 crisp apples Honeycrisp or Granny Smith work best
  • 1 cup toasted walnuts roughly chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • 1/4 cup shaved Parmesan cheese optional

Instructions
 

  • Start by massaging your chopped kale with a tablespoon of olive oil and a pinch of salt for about 2-3 minutes. This helps break down the tough fibers and makes the kale more tender.
  • Core and slice the apples into thin wedges or matchsticks.
  • In a small bowl, whisk together the remaining olive oil, apple cider vinegar, honey, and Dijon mustard. Season with salt and pepper to taste.
  • In a large bowl, combine the massaged kale and sliced apples.
  • Pour the dressing over the kale and apple mixture, tossing well to combine.
  • Add the toasted walnuts and gently toss again.
  • Top with shaved Parmesan if using, and serve immediately.
