Kale and Apple Salad with Walnuts

- 1 large bunch fresh kale stems removed and chopped
- 2 crisp apples Honeycrisp or Granny Smith work best
- 1 cup toasted walnuts roughly chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
- 1/4 cup shaved Parmesan cheese optional
Start by massaging your chopped kale with a tablespoon of olive oil and a pinch of salt for about 2-3 minutes. This helps break down the tough fibers and makes the kale more tender.
Core and slice the apples into thin wedges or matchsticks.
In a small bowl, whisk together the remaining olive oil, apple cider vinegar, honey, and Dijon mustard. Season with salt and pepper to taste.
In a large bowl, combine the massaged kale and sliced apples.
Pour the dressing over the kale and apple mixture, tossing well to combine.
Add the toasted walnuts and gently toss again.
Top with shaved Parmesan if using, and serve immediately.
