Lemon Herb Tilapia with Spinach
A quick, healthy, and delicious weeknight dinner recipe combining delicate tilapia with bright lemon and fresh herbs, served on a bed of nutritious spinach.

- 4 tilapia fillets about 6 oz each
- 2 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 2 cloves garlic minced
- 1 tablespoon fresh parsley chopped
- 1 teaspoon fresh thyme leaves
- ½ teaspoon dried oregano
- 8 cups fresh spinach
- Salt and black pepper to taste
- 1 lemon sliced for garnish
Pat the tilapia fillets dry with paper towels and season both sides with salt and pepper.
In a small bowl, combine olive oil, lemon juice, minced garlic, parsley, thyme, and oregano.
Heat a large skillet over medium-high heat. Add 1 tablespoon of the herb mixture.
Place the tilapia fillets in the skillet and cook for 3-4 minutes on each side, or until the fish flakes easily with a fork.
Remove the fish from the skillet and set aside.
In the same skillet, add the spinach and remaining herb mixture. Cook for 2-3 minutes until the spinach is just wilted.
Divide the spinach among four plates and top each with a tilapia fillet.
Garnish with lemon slices and serve immediately.
