Mediterranean Baked Halibut

- 4 halibut fillets 6 ounces each
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic minced
- 1 lemon zested and juiced
- 2 tablespoons fresh oregano chopped (or 2 teaspoons dried)
- 1 pint cherry tomatoes halved
- 1/2 cup kalamata olives pitted and halved
- 1/2 cup fresh parsley chopped
- Salt and freshly ground black pepper to taste
- 1/4 cup crumbled feta cheese optional
Preheat your oven to 400°F (200°C). Pat the halibut fillets dry with paper towels and season both sides with salt and pepper.
In a medium bowl, combine 2 tablespoons olive oil, minced garlic, lemon zest, and oregano. Brush this mixture over the halibut fillets.
In the same bowl, toss tomatoes and olives with remaining olive oil and a pinch of salt.
Place the seasoned halibut in a baking dish and arrange the tomato-olive mixture around the fish.
Bake for 12-15 minutes, or until the fish flakes easily with a fork and is just opaque in the center.
Remove from oven, drizzle with fresh lemon juice, and sprinkle with parsley and feta cheese if using.
