- 1.5 pounds cod fillets about 4 (6-ounce) fillets
- 1 pint cherry tomatoes
- 1/2 cup Kalamata olives pitted and halved
- 1/2 red onion thinly sliced
- 2 cloves garlic minced
- 1 tablespoon fresh oregano chopped
- 1 tablespoon fresh parsley chopped
- 1 lemon half juiced and half sliced into thin rounds
- 2 tablespoons olive oil
- Salt and black pepper to taste
Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish with olive oil.
In the baking dish, combine cherry tomatoes, halved Kalamata olives, thinly sliced red onion, and minced garlic. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat.
Place the cod fillets on top of the vegetable mixture, spaced out evenly.
Drizzle the remaining tablespoon of olive oil over the cod fillets. Squeeze the juice of half a lemon over the fish, and season generously with salt and black pepper.
Sprinkle chopped fresh oregano and parsley over the cod and vegetables. Arrange thin lemon slices on top of the cod fillets.
Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
Serve hot with the cooked vegetables and lemon slices.
