- 4 large croissants
- 2 ripe but firm pears
- 4 ounces blue cheese crumbled
- 2 tablespoons honey
- 1/4 cup chopped walnuts optional
- 1 Tablespoon unsalted butter
- 1 teaspoon fresh thyme leaves
Preheat your oven to 350°F (175°C). Wash, core, and thinly slice the pears.
Melt the butter in a medium skillet over medium heat. Add the pear slices and cook for about 3-5 minutes, until they begin to soften slightly. Stir in thyme leaves. Remove from heat.
Carefully slice each croissant horizontally, almost all the way through, like making a sandwich.
Spread a thin layer of honey on the bottom half of each croissant. Arrange a layer of sauteed pear slices over the honey. Sprinkle the crumbled blue cheese evenly over the pears. Top with chopped walnuts, if using.
Place the assembled croissants on a baking sheet. Bake for 10-12 minutes, or until the croissants are golden brown and the cheese is melted and bubbly.
