Ingredients
  

  • 4 large croissants
  • 1 ripe pear thinly sliced (Bosc or Anjou work well)
  • 4 ounces Gorgonzola cheese crumbled
  • 2 tablespoons walnuts chopped (optional)
  • 1 tablespoon honey
  • Fresh thyme sprigs optional, for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Carefully slice each croissant horizontally, almost all the way through.
  • Lay the sliced croissants open on the prepared baking sheet.
  • Distribute the crumbled Gorgonzola cheese evenly among the four croissants.
  • Arrange the pear slices on top of the Gorgonzola, overlapping slightly.
  • If using, sprinkle the chopped walnuts over the pears and cheese.
  • Drizzle a small amount of honey over each croissant.
  • Bake for 10-12 minutes, or until the croissants are golden brown and the cheese is melted and bubbly.
  • Remove from the oven and let them cool slightly on the baking sheet.
  • If desired, garnish with fresh thyme sprigs before serving.
