- 1 cup uncooked quinoa rinsed
- 1 large bunch kale stems removed and chopped
- 1 cup cherry tomatoes halved
- 1/2 red onion thinly sliced
- 1/3 cup toasted pine nuts
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh lemon juice
- 1/3 cup extra virgin olive oil
- 1 clove garlic minced
- 1 teaspoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Cook quinoa according to package instructions, typically using 2 cups of water for 1 cup of quinoa. Let it cool completely.
While the quinoa cooks, massage the chopped kale with a tablespoon of olive oil and a pinch of salt for about 2-3 minutes to soften it.
