- 1 large bunch kale stems removed and roughly chopped
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 medium red onion diced
- 1 red bell pepper sliced
- 2 carrots julienned
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon red pepper flakes optional
- Salt and pepper to taste
- 2 tablespoons toasted sesame seeds for garnish
Cook quinoa according to package instructions, typically using 2 cups of water for 1 cup of quinoa. Set aside to cool slightly.
Heat olive oil in a large skillet or wok over medium-high heat.
Add garlic and onion, sautéing until fragrant and translucent (about 2-3 minutes).
