- 2 pounds fresh broccoli cut into florets
- 4 cloves garlic thinly sliced
- 3 tablespoons olive oil
- 1 lemon zest and juice
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Optional: red pepper flakes for heat
- Optional: freshly grated Parmesan cheese for serving
Preheat your oven to 425°F (220°C).
Wash the broccoli and dry it thoroughly.
Cut the broccoli into evenly-sized florets, keeping some stem attached.
Place the broccoli on a large baking sheet and drizzle with olive oil.
Add the sliced garlic, salt, and pepper. Toss everything together until well coated.
Spread the broccoli in a single layer.
Roast for 20-25 minutes, flipping halfway through, until the edges are crispy and slightly charred.
Remove from the oven and immediately zest the lemon over the hot broccoli.
Squeeze fresh lemon juice over the top and toss to combine.
