Rustic Peach Galette with Honey

A simple and delicious free-form tart with sweet, juicy peaches, a flaky crust, and a drizzle of honey. Easier to make than pie and tastes just as good!

Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup 1 stick unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 4 medium peaches sliced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons honey
  • 1 tablespoon butter cut into small pieces
  • 1 large egg beaten (for egg wash)
  • Turbinado sugar for sprinkling (optional)

Instructions
 

  • In a large bowl, whisk together the flour and salt. Add the cold, cubed butter and use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  • Gradually add the ice water, one tablespoon at a time, mixing gently after each addition, until the dough just comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • While the dough is chilling, prepare the peach filling. In a medium bowl, gently toss the sliced peaches with the flour, granulated sugar, lemon juice, and cinnamon.
  • Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
  • Arrange the peach slices in the center of the dough, leaving a 2-inch border. Drizzle the honey over the peaches and dot with small pieces of butter.
  • Gently fold the edges of the dough over the peaches, pleating as you go.
  • Brush the edges of the dough with the beaten egg and sprinkle with turbinado sugar, if desired.
  • Bake for 35-40 minutes, or until the crust is golden brown and the peaches are tender and bubbly.
