In a large bowl, whisk together the flour and salt. Add the cold, cubed butter and use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Gradually add the ice water, one tablespoon at a time, mixing gently after each addition, until the dough just comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
While the dough is chilling, prepare the peach filling. In a medium bowl, gently toss the sliced peaches with the flour, granulated sugar, lemon juice, and cinnamon.
Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
Arrange the peach slices in the center of the dough, leaving a 2-inch border. Drizzle the honey over the peaches and dot with small pieces of butter.
Gently fold the edges of the dough over the peaches, pleating as you go.
Brush the edges of the dough with the beaten egg and sprinkle with turbinado sugar, if desired.
