- 1 pound elbow macaroni
- 4 cups smoked Gouda cheese freshly grated
- 2 cups sharp cheddar cheese freshly grated
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 4 cups whole milk
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1 teaspoon salt adjust to taste
- 1/2 cup panko breadcrumbs optional, for topping
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
Cook macaroni in salted water according to package directions until just al dente – don't overcook as it will continue cooking in the oven.
While the pasta cooks, melt butter in a large saucepan over medium heat. Add flour and whisk constantly for 1-2 minutes to create a roux.
