- 2 pounds ground lamb
- 1 medium onion finely diced
- 4 garlic cloves minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon cinnamon
- Salt and freshly ground black pepper to taste
- 4 brioche burger buns
- 1 cup Greek yogurt
- 1/4 cup fresh mint leaves finely chopped
- 1 small cucumber grated and drained
- 1 tablespoon lemon juice
- 1 garlic clove minced
- Salt to taste
In a large bowl, combine the ground lamb with diced onion, minced garlic, and all the spices. Mix gently with your hands until just combined – don't overmix, or the burgers will become tough.
Divide the mixture into 4 equal portions and form them into patties about 1-inch thick. Make a slight depression in the center of each patty with your thumb to prevent them from puffing up during cooking.
While the patties rest, prepare the mint yogurt sauce. Mix all sauce ingredients in a bowl until well combined. Refrigerate until ready to use.
Heat your grill or skillet over medium-high heat. Cook the burgers for 4-5 minutes per side for medium doneness, or adjust to your preferred level of cooking.
Toast the brioche buns lightly, then assemble your burgers with a generous dollop of mint yogurt sauce.
