Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine the softened butter, vegetable oil, and vanilla extract.
Add in the strawberry cake mix and the eggs to the bowl. Mix until just combined. Be careful not to overmix.
Pour the powdered sugar into a shallow bowl. Using a spoon or a cookie scoop, form the dough into balls, about 1 to 1.5 inches in size.
Roll each dough ball in the powdered sugar (optional) before placing it on the prepared baking sheet.
Place the cookie dough balls onto the prepared baking sheet, leaving space between each.
Bake in the preheated oven for 8-10 minutes, until the edges are just starting to set and the centers are still slightly soft.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
