Strawberry Cake Mix Cookies

Ingredients
- 1 box 15.25 ounces strawberry cake mix
- 1/2 cup 1 stick unsalted butter, softened
- 2 large eggs
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar for rolling (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the softened butter, vegetable oil, and vanilla extract.
- Add in the strawberry cake mix and the eggs to the bowl. Mix until just combined. Be careful not to overmix.
- Pour the powdered sugar into a shallow bowl. Using a spoon or a cookie scoop, form the dough into balls, about 1 to 1.5 inches in size.
- Roll each dough ball in the powdered sugar (optional) before placing it on the prepared baking sheet.
- Place the cookie dough balls onto the prepared baking sheet, leaving space between each.
- Bake in the preheated oven for 8-10 minutes, until the edges are just starting to set and the centers are still slightly soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
