- 1.5 pounds boneless skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon garlic powder
- 1/2 teaspoon ginger powder
- Green onions thinly sliced (for topping, optional)
- Sesame seeds for topping, optional
Cut the chicken breasts into 1-inch pieces.
In a bowl, mix cornstarch, salt, and pepper. Add chicken pieces and toss to coat.
Heat vegetable oil in a large pan over medium-high heat. Add chicken in a single layer and cook for 5-7 minutes per side, until browned and cooked through to 165°F (74°C).
In a small bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, garlic powder, and ginger powder.
Reduce heat to low and pour the glaze over the cooked chicken. Stir until chicken is coated and sauce thickens slightly, about 1-2 minutes.
Remove from heat and garnish with green onions and sesame seeds, if desired. Serve immediately.
