Turkey and Avocado Croissant

- 4 large fresh croissants
- 2 medium ripe avocados
- 8 ounces of sliced deli turkey
- 1 medium tomato
- Lettuce leaves
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Salt and Black Pepper to taste
- Optional: Red onion slices
- Optional: Cheese slices cheddar, Swiss, or provolone
Cut the avocados in half, remove the pits, and scoop the flesh into a small bowl. Mash it with a fork until it's as smooth or chunky as you like. Add a pinch of salt and pepper.
Carefully slice each croissant in half horizontally, like you're making a sandwich.
Spread a thin layer of mayonnaise on the bottom half of each croissant. Then, add a small amount of Dijon mustard on top of the mayo if you are using it.
On the bottom half of each croissant, layer some lettuce, followed by a few slices of tomato.
Top the tomato with a generous portion of sliced turkey.
Spread a good amount of the mashed avocado on top of the turkey.
If you are using them, add red onion, or cheese slice on top of the avocado.
Place the top half of the croissant back on and serve immediately.
