Introduction
These apple bars use a biscuit-mix base pressed into an 8 by 8-inch pan, then topped with sliced apples tossed in citrus juice and warm spices. They bake in 30 minutes and cut best after cooling, which makes them useful for dessert, packed snacks, or a small batch weekend bake.

Ingredients
Base
1 cup (240 ml) commercially-prepared baking mix or biscuit mix
¼ cup brown sugar
1 egg
1 ounce (30 g) butter
½ teaspoon cinnamon powder
¼ teaspoon powdered ginger
¼ teaspoon ground nutmeg
Topping
2 soft-textured apples, sliced
1 splash of grapefruit or lemon juice
½ teaspoon cinnamon powder
¼ teaspoon powdered ginger
¼ teaspoon ground nutmeg
3 tablespoons baking mix or biscuit mix
3 tablespoons brown sugar
Instructions
Make base
Combine the baking mix, egg, brown sugar, and spices in a bowl.
Rub the butter into the base mixture with your fingers. The mixture should not be sticky.
Line an 8 by 8-inch (20 by 20 cm) baking pan with parchment paper.
Press the base mixture into the bottom of the baking pan (you might want to press it up the sides a little).
Prepare topping
Toss the sliced apples in the grapefruit or lemon juice, distributing the juice evenly.
Combine the cinnamon, ginger, nutmeg, baking mix, and brown sugar.
Toss most of the spice mix with the apples. Reserve the remaining spice mix.
Tip the lightly coated apples on top of the prepared base in the pan. Try to arrange the slices to have an even layer.
Sprinkle the remaining spice mixture on top of the apples.
Bake
Preheat oven to 375°F (190°C).
Bake for 30 minutes at 375°F (190°C).
After allowing it to cool, you can lift the slice out of the baking pan by the corners of the parchment paper and put it on a plate for easy slicing.
Variations
- Use lemon juice instead of grapefruit juice if you want a cleaner, sharper acidity in the topping.
- Replace one of the apples with a ripe pear for a softer, sweeter fruit layer.
- Swap the brown sugar for dark brown sugar in the base and topping for a deeper molasses flavor and a slightly darker finish.
- Use a gluten-free baking mix in place of the regular baking mix if you need that option; the bars will be a bit more delicate and crumbly.
Tips for Success
- Slice the apples evenly so the topping bakes at the same rate across the pan.
- Rub the butter into the base mixture until no large pieces remain; visible chunks can leave greasy spots.
- Toss the apples with the citrus juice before adding the spice mix so the dry ingredients stick evenly.
- Press the base firmly into the lined pan so it holds together when you lift it out.
- Cool the bars fully before slicing, or the apple layer can slide and the base can break.
Storage and Reheating
Store the bars in an airtight container in the fridge for up to 4 days. If you want to freeze them, wrap individual pieces tightly and place them in a freezer-safe container for up to 2 months.
Reheat in a 300°F oven for 8 to 10 minutes to bring back some texture in the base. For a quicker option, microwave individual pieces for 15 to 20 seconds; the apple layer will stay soft. Thaw frozen bars in the fridge overnight before reheating.
FAQ
What kind of apples work best?
Use apples that soften readily when baked, since the recipe is built around a tender fruit layer. If your apples are firm, slice them thinner so they cook through in 30 minutes.
Can you use lemon juice instead of grapefruit juice?
Yes. Lemon gives a brighter, more direct acidity, while grapefruit is a little softer and slightly bitter.
Why is the base still sticky after mixing?
The butter may not be rubbed in enough yet. Keep working it in with your fingers until the mixture feels crumbly rather than wet.
Can you make these with gluten-free baking mix?
Yes, as long as it is a baking mix meant to replace standard biscuit or baking mix directly. The base will usually be a little more fragile, so let the bars cool completely before cutting.
