BBQ Chicken Quesadillas

Introduction

Looking for a quick weeknight dinner that combines the smoky goodness of BBQ with the melty comfort of quesadillas? These BBQ Chicken Quesadillas are my go-to solution when I want something delicious without spending hours in the kitchen. They’re crispy on the outside, gooey on the inside, and packed with flavor that’ll make your taste buds dance. Perfect for using up leftover chicken or starting fresh, these quesadillas are guaranteed to become a family favorite.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1/2 cup BBQ sauce (your favorite brand)
  • 2 cups shredded cheese (Mexican blend or cheddar)
  • 4 large flour tortillas
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons butter for cooking
  • Optional: sliced jalapeños, sour cream for serving

Instructions

  1. In a medium bowl, mix the shredded chicken with BBQ sauce until well coated. Feel free to add more sauce if you like it extra saucy.
  2. Heat a large skillet over medium heat. While it’s warming up, lay out your tortillas on a clean surface.
  3. Spread the BBQ chicken mixture on one half of each tortilla, leaving a small border around the edge.
  4. Top the chicken with shredded cheese, sliced red onions, and cilantro. If using jalapeños, add them now.
  5. Fold the empty half of each tortilla over the filling to create a half-moon shape.
  6. Add a small pat of butter to the heated skillet. Once melted, place the quesadilla in the pan.
  7. Cook for 2-3 minutes on each side, or until golden brown and crispy, and the cheese is fully melted.
  8. Repeat with remaining quesadillas, adding butter as needed.

Recipe Notes

Here are some pro tips to make your BBQ Chicken Quesadillas even better:

  • For extra-crispy quesadillas, spray or brush the outside of the tortillas with a little oil before cooking.
  • If using leftover chicken, warm it slightly before mixing with BBQ sauce – it’ll blend better.
  • Don’t overfill your quesadillas; this makes them difficult to flip and can lead to filling falling out.
  • Let the quesadillas rest for 1-2 minutes before cutting – this helps keep the filling inside.
  • To keep finished quesadillas warm while cooking others, place them in a 200°F oven on a baking sheet.
  • These quesadillas freeze well! Just wrap them individually in foil and reheat in a 350°F oven when ready to eat.

These BBQ Chicken Quesadillas are perfect for lunch boxes, quick dinners, or even cut into smaller pieces for appetizers. Serve them with additional BBQ sauce, sour cream, or fresh guacamole for dipping. The combination of crispy tortilla, melted cheese, and tangy BBQ chicken is simply irresistible!
