  • 1 tablespoon ginger, grated
  • 2 tablespoons vegetable oil

For the sauce:

  • ⅓ cup natural peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon maple syrup or honey
  • ¼ cup warm water

Instructions

  1. Press your tofu for at least 15 minutes to remove excess moisture. While waiting, whisk together all sauce ingredients in a bowl until smooth.
  2. Cut the tofu into 1-inch cubes and toss with cornstarch until evenly coated.
  3. Heat 1 tablespoon oil in a large wok or skillet over medium-high heat. Add the tofu and cook for 2-3 minutes per side until golden brown. Remove and set aside.
  4. In the same pan, add remaining oil, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
