Baked Avocado Fries

Crispy on the outside, creamy on the inside, and packed with good-for-you fats, they’re a delicious twist on traditional fries that’ll have everyone asking for seconds.

Ingredients

  • 2 large, firm avocados
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut each avocado in half, remove the pit, and slice into 1/2-inch thick wedges. You should get about 8 wedges per avocado.
  3. Set up your breading station: Place flour in one shallow dish, beaten eggs in another, and combine panko breadcrumbs with garlic powder, paprika, salt, and pepper in a third dish.
  4. Working with one wedge at a time, coat the avocado in flour, dip in egg, then roll in the seasoned breadcrumbs until well-coated.
  5. Arrange the breaded wedges on your prepared baking sheet, leaving space between each piece.
  6. Spray the wedges lightly with cooking spray – this helps achieve that golden-brown color.
  7. Bake for 15-20 minutes, flipping halfway through, until the coating is crispy and golden brown.

  • Choose avocados that are ripe but still firm – they should yield slightly when gently pressed but shouldn’t be too soft.

  • To make these gluten-free, substitute the all-purpose flour with almond flour and use gluten-free panko breadcrumbs.
